The domain is specialized in the production of extra virgin olive oil which is fruity and green. Several varieties are being studied in order to expand the range to include different levels of intensity. The first products available are the "Cuvée Sauvage" which a blend of Bouteillan (60%), Aglandau (35%) and Picholine (5%).

Tasting notes :
A character oil with a good aromatic intensity and a balanced bitter/pungency. A fresh and intense nose of cut grass, green apple. A complex and ample taste with hints of artichoke, fresh almond and a pepperyfinish.

Cooking :
Classically, on a grilled side of beef oron a tomato and parmesan salad. Modern, on sugared strawberries or on an apple tart.
